Vegan  Blueberry Scones

Vegan blueberry scones are loaded with fresh blueberries and topped with tangy lemon icing!  This recipe is easy to make and requires only 9 simple ingredients. Whip up a batch for breakfast with a cup of coffee or tea.

Add the dry ingredients to a large bowl and mix them together.

Step 1:

Dollop the oil into the bowl.

Step 2:

Use a pastry cutter or fork to cut the oil into the dry ingredients.

Step 3:

Slowly mix in the plant milk adding a little at a time until the dough comes together and there are no dry flour crumbles at the bottom of the bowl.

Step 4:

Add the blueberries to the bowl and carefully mix them in.

Step 5:

Then, form the dough into a ball.

Step 6:

Shape and flatten the dough into a 2-inch thick disc using your hands. Then cut it into 8 triangles.

Step 7:

Pull the cut scones apart and space them out on a baking sheet.

Step 8:

Bake at 400ºF for 15-22 minutes. Allow the scones to cool before icing.
