Vegan Lentil Loaf

This hearty vegan lentil loaf is easy to make, packed with vegetables, and loaded with protein. Its perfectly browned edges and caramelized glaze top will make it the star entrée this Thanksgiving and Christmas.

Ingredients

Cook the lentils and quinoa and sautee the veggies. Then, add the cooked lentils and quinoa to a large mixing bowl.

Step 1: 

Use a potato masher, or fork, to mash about half of the mixture.

Step 2: 

Add the sautéed veggies and remaining ingredients to the bowl.

Step 3: 

Mix everything together until well combined.

Step 4: 

Add a sheet of parchment paper to the bottom of your loaf pan. Then, firmly press the lentil mixture into the pan.

Step 5: 

In a small bowl, mix together ketchup, BBQ sauce, and maple syrup to make a glaze. Brush the glaze over the top of the loaf.

Step 6: 

Bake the loaf in the oven at 350ºF for 30 minutes or until the edges begin to brown.

Step 7:
