Asian-inspired vegan lettuce wraps are an easy, packable light meal. Serve these gluten-free wraps with a side of rice for a quick & simple lunch or dinner.
1head of butter lettuceleaves separated but kept whole
1mediumcarrotgrated
green onionschopped
toasted sesame seeds
Instructions
For the Sauce
Add the sauce ingredients to a small bowl and mix. Set aside.
For the Lentils
In a medium saucepan, heat the oil, then add the onion, garlic, and ginger. Sauté for about 5 minutes to slightly brown and soften the onions.
Stir in the lentils, then add the vegetable broth. Turn down the heat, cover, and simmer for about 10 minutes, until the broth is fully absorbed and the lentils are cooked. Mix in the walnuts and about half of the sauce, or to taste.
To Serve
Fill a lettuce leaf with the lentil mixture and top with shredded carrot, green onions, and sesame seeds. Optional: Spoon a small amount of the extra sauce over each wrap.
