I was never too fond of the taste of mock cheese. I ate it because the thought of a pizza lacking stretchy cheese didn't sound 'appealing' at the time. That is until.....
One day I decided to look at the ingredients of the mock cheese I buy. I found a few items I had recently added to my "bad ingredients list" because they are not appealing. So, into the trash it went and I was on the hunt for another cheese alternative.
After many failed attempts at making my own stretchy cheese, I decided to replace the mock cheese in my BBQ Pizza with more Vegan Cashew Parmesan in hopes my family didn't notice. Well, they did notice and actually thought the pizza was better than ever.
It was a hit and I've found my cheese replacement for now!
Seriously, you can put it on just about anything! I have replaced the mock cheese, in so many dishes, with this healthier, cashew-based vegan parmesan and we actually prefer it!

Vegan Cashew Parmesan
This Vegan Cashew Parmesan is so tasty you’ll want to put it on EVERYTHING! Use it as a dairy-free alternative on pizza, pasta, salads and more!
Ingredients
- 1 cup raw cashews
- ¼ cup nutritional yeast
- ¾ teaspoon Himalayan pink salt
- ¼ teaspoon garlic powder
Instructions
- Add all ingredients to a nutri-bullet, blender or processor.
- Blend for about 5 seconds or until the cashews are finely ground.
- Store in the fridge and enjoy this on everything!
- Will keep in fridge for at least 2 months.

What is meant by “pink Salt”? Himalayan salt or curing salts?

I haven't tried freezing it because my family goes through it so quickly, but I think it should do just fine for at least 3 months in there.
